Pan-fried Bacon Wrapped Tofu


Recipe for  Pan-fried Bacon Wrapped Tofu


Ingredients:
  • 1 tube Egg Tofu
  • 5-6 strips Low Sodium Streaky Bacon

How to do it:
  1. Lay bacon side by side, overlapping a little.
  2. Place egg tofu across one end.
  3. Roll it till it meets the other end of the roll of bacon.
  4. Bacon ends should overlap.
  5. Gently place the ends part down to a hot pan.
  6. Plan fried on medium heat till the bacon is lightly brown.
  7. The bacon should stick well and encase the tofu.
  8. Turn and rotate to evenly brown all sides of brown.
  9. Remove and slice with a serrated knife.
  10. Serve as it is or with Goma (Sesame) Sauce, if you like.

Fusion Chicken Rice with Roasted Chicken and Bacon


I tweaked and combined a few recipes to come up with this dish; because I wanted to eat everything  from all those dishes. ;)

My son is a rice (and soup) person.  He will ask for rice even when I made chicken cutlet.  Hence, this time, I decided to do a western-style chicken rice.  The rice here was cooked Hainanese Chicken Rice style, but with homemade chicken broth and garlic only. I didn't use pandan leaves as I didn't want a clash of flavours with the western-style chicken.


I usual roast or grill a whole chicken but the breast meat always get 'abandoned'.  So this time, I used boneless chicken thighs instead.  It's is also easier to serve and less messy to eat.

The chicken is a combo of 3 old recipes I have.  It has the Herbs from Grilled Chicken with Herbs,  the Bacon from Roast Chicken with Bacon and the Garlic from Roast Chicken with Garlic and Lemon .


Ingredients:
  • 4 boneless Chicken Thighs or Legs, cleaned and pat dry
  • 2 teaspoon Dried Thyme
  • 2 teaspoon Dried Rosemary
  • 1 1/2 teaspoon Dried Parsley
  • Rind of 1 whole Lemon
  • 2 tablespoon Lemon Juice
  • 1 tablespoon Olive Oil
  • 20 gloves Garlic, skin intact
  • 6 to 8 Slices Streaky Bacon
  • 150ml Chicken Stock
  • 2 tablespoon Sake or any other cooking wine
  • Salt and Ground Black Pepper

How to do it:
  1. Rub 2/3 of the herbs and lemon rind on all the chicken thighs.
  2. Season and rub with salt and pepper.
  3. Lay chicken thighs on a baking dish.
  4. Place bacon strips over the chicken thighs, covering them.
  5. Drizzle lemon juice and olive oil over.
  6. Sprinkle the remaining herbs and lemon rind.
  7. Scatter the garlic around the baking dish.
  8. Pour chicken stock and wine into the dish.
  9. Roast in a preheat oven at 200c for 10 -15 mins or till the bacon starts to turn crispy and brown.
  10. Remove the bacon and set aside.
  11. Continue to roast the chicken for another hour, basting it with juice from the dish occasionally to let the chicken meat absorb the flavours.
  12. Do not bast chicken during the last 15 mins of roasting to let the chicken skin become dry and turn crispy.
  13. You may want to return the bacon strips back to the chicken to let it heat up for 5 mins.
  14. Remove chicken from dish and drain roasting juice from excess oil.
  15. Chop chicken into smaller pieces and place bacon together.
  16. Drizzle juice over rice if you like.
  17. Serve chicken and bacon rice  with the sweet garlic.

Note:
  • As different oven works differently, please adjust the timing or temperature accordingly.
  • If the chicken is browning too fast, lower the temperature and roast longer.
  • Alternatively, you may wish to place a foil tent over the bacon/chicken to prevent them from browning to fast on the top but under-cook inside.

{ Breakfast: Pancake with Egg, Sausage and Bacon }



This morning's breakfast was Pancakes with whatever I'm trying to clear in the fridge. :P

I bought 2 boxes of button mushroom a few days ago but did not store them properly and they were all bruised and turning brown. So my daughter was happy that she's having her favourite mushroom soup again.

The bacon was expiring soon, so I had to clear that too. I added an egg (with a runny yolk) and a couple of sausages too.

This was the kids' breakfast. I can't eat this much for breakfast. I'm just having some simple fluffy pancakes.

Bacon Nugget with Broccoli
培根鱼肉金块


This is a re-post of my old recipe, Bacon Nugget, a kids' favourite.

I had some fish paste left from another dish that I was preparing, I use it to make this again for my son. My daughter doesn't like bacon. =_=|||

This time I had broccoli, shitake mushroom and coriander in them. You can try out another our veggies and/or add minced meat too.

I'll be just sharing the instructions on how it's done. The ingredients used are based on your personal preference. Try getting low sodium bacon if possible. If you find bacon too salty or oily, you can replaced it with thin sliced ham too.

How to do it:
  1. Chopped vegetables and mix with fish paste and minced meat if using.
  2. Wrapped about half tablespoon full of mixture with half a strip of bacon, overlapping it a little.
  3. Do not try to use too much filling as it will expand during cooking while the bacon will shrink.
  4. Pan fry without oil on low to medium heat with bacon ends/joining down first.
  5. Once the joined part is sealed turn to other sides.
  6. Continue cooking till the meat has completely cooked.

Caramelised Peppered Bacon

We love bacon cos it makes food taste extra nicer with it. :P My son prefers bacon over ham. However, you might find bacon over salty, even if it's low sodium bacon.

I like to 'season' my bacon so it's not so 'boring' and salty. It will makes a great side to any breakfast or meal. Like the Sausage with Bacon Sandwich I made with these bacon.

You got to try it to believe it. ;)

Ingredients:
  • 4 strips Streaky Bacon
  • 1 teaspoon Brown Sugar or to taste
  • Ground Black Pepper

How to do it:
  1. Pan fry bacon without oil on medium heat.
  2. Sprinkle ground black pepper on the bacon while it's cooking.
  3. Turn over and do the same.
  4. When bacon is almost done to your liking, reduce heat.
  5. If there are a lot of oil, drain it.
  6. Sprinkle brown sugar on both sides of the bacon.
  7. Cook for about 20 second till sugar melts but not burn.
  8. Remove to cool.
  9. Serve as sides.

Easy Pizza
简易比萨饼


It has been raining non-stop recently. The kids are stuck at home most of the time. I decided to let them make pizza for dinner to pass time.

They get to have some fun and I get to make them eat what they made. ;p My kids don't eat pizza. Hence I told them if they want to make it, they will have to eat it too. I'm glad my plan worked because the elder one finished almost the whole pizza and the younger one finished half of it.


Using Wraps as Pizza Base


I used Wraps as the pizza base and pasta sauce for the pizza sauce. I prepared a few ingredients that the kids would like and some that they didn't. *trying my luck* They went ahead to prepare the pizza that they like.

I baked the pizza at 200C for 15 minutes and the easy peasy pizzas are ready to be eaten!





In case you are interested, I have prepared hot-dog, ham, canned button mushroom, pre-cooked bacon, tomato, bell peppers, onions and Mozzarella Cheese.


My pizza, using whatever the kids have left over and what they didn't want.
It has lots of bell pepper, onions & tomatoes. I love it! ;)

Bacon Wrapped Wings


I did early this month but was busy to blog about it. I had bought the wings to make another dish but my husband called to informed that he won't be able to return home for dinner. Hence, I decided to make these instead and we can have it anytime. This is my son's favourite wings recipe because of the bacon. :P

I'm using low sodium streaky bacon here (which is what I have in the fridge). If you are using normal streaky bacon, do not include salt in your marinade.

Ingredients:
  • 8 Mid Joint Wings
  • Juice of 8 Kalamansi
  • 1 1/2 sprig Rosemary, leaves only and chopped finely
  • 1 pinch salt
  • 4 slices low sodium Streaky Bacon, cut into 2

How to do it:
  1. Marinate the wings with Kalamansi juice, salt and chopped Rosemary for 1 hours.
  2. Leave some chopped Rosemary for later use.
  3. Wrapped 1/2 piece of bacon around the wing.
  4. Secure with skewer; soaked in water before hand.
  5. Sprinkle the remaining chopped Rosemary on the bacon.
  6. Grill in preheated oven at 200C for 25 minutes.
  7. Turn over wings in-between grilling.
  8. Serve with a squeeze of Kalamansi juice if you like.

Egg, Bacon & Cheese Flan


Okay, it's actually not a flan. It's egg dish dressed up to look like a flan. :P

It's another variation of the usual egg and bacon/ham that we like for breakfast. Except this version is less oily. You can have it as it is or serve it with bread, as a sandwich.

Ingredients:
  • 3 slice Streaky Bacon
  • 2 Eggs
  • 2-3 tablespoon Grated Parmesan Cheese
  • Butter
  • Sprinkle of Dried Parsley
  • Salt and Ground Black Pepper to taste

How to do it:
  1. Spread butter around an oven proof dish.
  2. Cut streaky bacon into smaller piece.
  3. Either scatter around or lay around the side of oven proof dish.
  4. Bake in preheated oven at 180C for 15 minutes.
  5. Remove and crack 2 eggs into dish.
  6. Season with salt and pepper.
  7. Top with Parmesan cheese and parsley.
  8. Place oven proof dish in a tray.
  9. Fill water in the tray to reach 2/3 of the dish.
  10. Continue to bake for 15 minutes or till egg is set.
  11. Remove and serve immediately.

Note:
  • It is better to bake the egg in water. It is to prevent the egg from becoming tough and rubbery.
  • You can use ham instead of bacon. If using ham, it's not necessary to bake it first.
  • Go easy with the salt as bacon and cheese are used here.

Baked Cheesy Mushroom Pot

I had leftovers of some ingredients and decided to put them all together and voila! Only thing missing is perhaps pasta and cream here. But I guess my family didn't care. They like it with rice too. Actually, they are not fans of pasta anyway. ;)  

Ingredients:
  • 1 clove Garlic, minced
  • 1/3 tablespoon Oil
  • 4 Shitake Mushroom, sliced
  • 3 Button Mushroom, sliced
  • 1 King Oyster Mushroom, sliced
  • 1 Streaky Bacon, chopped into bits
  • 1 slice Ham, chopped into bits.
  • 1 slice Cheese (Kraft singles)
  • 1 handful Mozzarella Cheese
  • 1 tablespoon Parmesan Cheese
How to do it
  1. Heat oil in wok.
  2. Add bacon and garlic and cook till garlic is fragrant.
  3. Add in ham and mushroom.
  4. Stir fry till mushroom are 90% cooked.
  5. Pour into a oven proof dish.
  6. Tear the singles cheese and mix well with the mushroom.
  7. Top mushroom with Mozzarella Cheese followed by Parmesan Cheese.
  8. Bake at preheated oven at 190C for 12 minutes or till cheese melts and brown slightly.
  9. Remove and serve.
Note: This the a dish of leftovers. You don't have to follow exactly what I use. You can use only one type of mushroom if you like. I just want to finish all that was left in my fridge.

Bacon Nuggets

Wow! It's has been more than a month since my last update. I had been busy for the past few weeks. Had lots of activities - gatherings (at my place, so lots of cleaning and cooking), birthday celebrations, get-together with relatives coming back to Singapore to visit, kids' school activities, then the kids were sick and now I'm sick. But anyway, this update shows that I'm still very much alive. Did anyone miss me? :P Just a quick post 'cause I'm still not very well. I have been coughing my lungs out. :( This is a kid's favourite and I bet it will be a great finger food for parties. The basic ingredients are streaky bacon and fish paste. I have added grated carrot here though you can't really see it. Shorten the streaky bacon by cutting it in half. Spread some fish paste on it and roll it. The ends of the bacon should be touching or overlapping each other a little. If you would like to add in some chopped or shredded veggies or mince meat, mix them in the fish paste first before spreading on the bacon. Do not put it too much fish paste as it will expand and the bacon will shrink a little when cooked, then the bacon may burst open - not very nice visually. ;) After that, pan fry it with the ends of the bacon facing down on low to medium fire and don't add oil. Once the ends of the bacon had 'stick' together, turn to other sides and continue cooking till the fish paste is cooked. Alternatively, you may want to steam it first before pan frying it. It's faster to cook and healthier too. But do remember to use toothpick to hold the bacon together. Before serving, dab the bacon nuggets with paper towels to remove excess oil. And there you have it, Bacon Nuggets. Enjoy!

Sausage with Broccoli



I was really lazy yesterday and I just didn't want to spend too much time cooking. Mum has Monday's Blues also, you know? :p

I just made this 2 in 1 dish for the kids, with soup of course. They can't eat without soup. ^_^"

This is not 五香贯肠. It's just Sausage wrapped Bacon. ;) Yap, I just wrapped the sausage with bacon and pan fried it at low fire till the bacon is crispy. I served it with some blanched broccoli and that's about it.

Hopefully, there's no Tuesday's Blue. :P

Pan Grilled Bacon rolled Prawns


Two of my son's favourites are here, prawn and streaky bacon. I used some of the bacon for previous dish and the rest were used here.

My son had this with his tomato sauce and I have it with my sweet and spicy sauce. And my daughter just ate the bacon. ^_^"

To do this, you will only need large prawns and bacon. Smaller prawns are not advisable to be used here as they will end up being dry and hard.

First, you have to shell your prawns. The head and shells can be retained to make Laksa. Then pierce a wooden skewer through the prawn from the tail-end. Oh, and please remember to wet the wooden skewer first. This is to prevent it from burning during the grilling process.

Next, wrap a bacon from the tail-end with the fatty part of the bacon 'outside'. Overlap the bacon a little and continue wrapping till the whole prawn is covered. Tuck the loose end of the bacon in. If you have no idea how to do it, just use a toothpick to secure. Likewise, wet the toothpick first before use. You can season with some ground black pepper and set them to grill till cooked. Remove the toothpick and serve.

If you have the time, the best way to do this is to partially cook the bacon first. It should not be brown; just cooked. This should take about less than 1 minute. Let it cool then starts with the wrapping. This is to ensure that the prawn that is wrapped inside will not be over cooked and become dried. You can use this method too if you are not using large prawns.

You can also do this using the oven if you like. I haven't seen the grilled marks on my food for a long time so I'm using the grill pan this time. ;)

Roast Chicken with Bacon


Anything with bacon seems to be tasty. :P My husband stays away from this now because he thinks it's bad for his cholesterol. ^_^" Still he stole a bite of the chicken meat, without skin, without bacon and likes it too.

I like it how the bacon 'protects' the chicken from getting dry and hard and also at the same time seasons it. With bacon in here, you don't need any other seasonings. Just let the bacon to the job. Well, with the help of a slice of lemon too.

This is my son's current favourite (because of the bacon lah). It might be yours too. Try it!



Ingredients:
  • 2 Large Chicken Drumstick
  • 4 slices Streaky Bacon
  • 3 glove Garlic, crashed with skin on
  • 2 slices Lemon

How to do it:
  1. Place a slice of lemon on the chicken.
  2. Wrap a slice of streaky bacon slightly tight starting from the joint part with the fatty part of the bacon should be 'outside'.
  3. Overlap the bacon a little so you don't see the chicken.
  4. Place the chicken in a oven proof dish with the loose end bacon placed down.
  5. Scatter the garlic around.
  6. Roast the chicken in a preheated oven at 220C for 15 minutes.
  7. Reduce the temperature to 170C and continuing roasting for another 40 minutes or till thoroughly cooked.
  8. Serve.

French Beans with Ham and Bacon Bits


This bag of french beans was the last of the vegetables after I cleared the asparagus. I had wanted to empty the fridge for easy cleaning.

I planned to cook this but realised I didn't have minced pork. So I used the ham and streaky bacon, meant for my son's breakfast, instead.

Ingredients:
  • 400g French Beans
  • 2 slice Ham, chopped into bits
  • 3 slice Streaky Bacon, chopped into bits
  • 1 teaspoon Garlic, minced
  • 1 teaspoon Fermented Soybean Paste (try the spicy one if you like)
  • 1/2 teaspoon Sugar

How to do it:

  1. Snap of the ends of the french beans.
  2. Deep fry french beans for 5 minutes. Drain and set aside.
  3. Heat up the wok and add in the bacon.
  4. Stir fry the slightly brown. Do not drain the oil.
  5. Add in the garlic and ham.
  6. Stir fry till garlic is fragrant and the bacon and ham are brown.
  7. Add in the French beans, fermented soybean paste and sugar.
  8. Stir fry for another 30 seconds to a minute till french beans are thoroughly cooked and season.
  9. Dish and serve.

Asparagus Drumstick



This is an improvised version of this dish I did. I realised how my son loves surprises, so I thought I just 'hide' his favourite bacon.


The additional steps to this dish is to dip into a batter then coat with breadcrumbs before frying it. I served it with tomato sauce and mayonnaise for my son.

Ladies' Finger with Back Bacon Rolls



I was lazy to come up with ideas to dress up my son's dinner yesterday so he had rice balls in the end.

I wanted him to try eating ladies' finger (it was the veg of the day :p See my other dish). As usual, I cooked it with something he likes. He had Xiao Bai Cai as per his request too.

Ingredients:
  • Back Bacon
  • Ladies Finger, top removed and blanched
  • Oil for frying
How to do it:
  1. Saute the back bacon on both sides with a little oil.
  2. Wrap the ladies finger with the bacon.
  3. Secure with a toothpick.
  4. Return to pan to pan fried till slightly brown.
  5. Dish and serve.
Note:
  • I used Back Bacon instead of Streaky Bacon because it got more meat.
  • No seasonings required as Back Bacon is slightly saltish.

Scallop Bacon Wraps

I have this (bad) habit of storing (more expensive) food during Chinese New Year. Stuff I usually buy once a while (if I have leftover marketing money). Maybe I get more marketing money during this period. hehehe. My hubby 'scolded' me, "Let you keep some pocket money, you do want. And buy so much food for what?" Hehehe .... I like to eat mah. Everyone can eat also mah. *bleh*

By the way, I had this idea from a Italian Food Stall/Kiosk at Bukit Panjang Plaza. It's no longer there. I really miss it! 3 huge scallops wrapped with thick bacon grilled to perfection for only $2. *drooling*

Ingredients:
  • Bacon, sliced into 2 width-wise (My scallop is small lah ^_-)
  • Scallops
How to do it:
  1. Saute the bacon for about 1 minute.
  2. Remove.
  3. Take a scallop and use the bacon cooked earlier to wrap around the scallop.
  4. Pierce a toothpick thru the bacon and scallop to hold them together.
  5. Bring it to the pan you use to saute the bacon earlier.
  6. Cook each side of the bacon for about 5 mins each (longer for bigger scallop)
  7. Add a bit of oil if necessary.
  8. Remove and serve. Remember to remove the toothpick.
Note:
  • No seasoning required as bacon is already salty.
  • Make sure the bacon is of the same height or lower than the scallop when wrapping them. That is when you need to slice them into half.
  • Wet you toothpick first before you use them. This is to prevent your toothpick for getting burned or catching fire because oil is involved.

Bacon & Beef Rolls

In this dish, I have combined 2 dishes, Asparagus with Bacon and Beef Rolls in Tomato Sauce , together. I have also added some more ingredients to it.

See how easy it is to change a dish by adding or changing ingredients. I have Crabstick, Asparagus and Baby Corn for both Bacon and Beef Rolls.

If you have some dishes you like, change the ingredients or the method of cooking and wala! It’s a new dish!

Asparagus with Bacon

Something I did to try to get my son to eat more vegetables. Hope this works.

Ingredients:
  • 8 asparagus
  • 4 pieces of bacon
  • Cornflour
  • Tomato sauce

How to do it:
  1. Cut the ends of the asparagus stems and skin the asparagus
  2. Cut the bacon into half and wind the bacon around the asparagus.
  3. Use a toothpick to hold the bacon.
  4. Dust with cornflour.
  5. Pan-fried on a non-stick pan till the bacon is cook or brown.
  6. Serve with some tomato sauce. 

Note:
If you are not using non-stick pan, just use a teaspoon of oil. There will be enough oil from the bacon later.
