Stewed Beef with Vegetables

My daughter doesn't like carrots and potatoes. That's was before I made this dish. She began to love them after that. She ate the beef in this dish too. It helps that I use thinly sliced beef (Shabu Shabu beef), so it's easier for the kids to eat. You can use pork instead if you like. Ingredients:
  • 150g Shabu Shabu Beef, may be refer too as Steamboat beef too
  • 1 Medium Potato, skinned and chopped
  • 1 Medium Carrot, skinned and chopped
  • 1/2 Onion
  • 1/2 tablespoon Mirin
  • 1 tablespoon Chinese Cooking Wine
  • 1 1/2 tablespoon Light Soy Sauce
  • 1/2 tablespoon Sugar
  • Salt to taste
  • 150ml Water
How to do it:
  1. Stir fry beef with a little oil till almost cooked.
  2. Remove and set aside.
  3. Add in the vegetables into the pot to stir fry.
  4. Add in the remaining seasoning except for salt.
  5. Bring to a boil before reducing heat into a simmer for 15 minutes.
  6. Return the beef back into the pot and continue to simmer for another 15 minutes.
  7. Add salt to taste.
  8. It is ready with the vegetable become soft right through the middle.
  9. Serve with rice.

Stir Fried Beef with Spring Onion and Ginger


In the past, when I do not know how to cook, my husband and I would to eat at 煮炒店 (a more economical alternative to dining at restaurants). One dish we like to order is 姜葱鹿肉 Stir fried Deer Meat with Spring Onion and Ginger but seriously, do you think they really serve Deer Meat? I think it's more like beef to me. We like how they do it. It's always tender, not tough at all.

Ingredients:
  • 250g Lean Beef, sliced into strips
  • Spring onions, white part only cut into sections
  • 5 slice Ginger
  • 1 tablespoon Oil
Marinade:
  • 1/2 tablespoon Chinese Cooking Wine
  • 1 tablespoon Light Soy Sauce
  • 2 teaspoons Cornflour
Seasonings:
  • 1/2 tablespoon Chinese Cooking Wine
  • 1/2 tablespoon Oyster Sauce
  • 1/2 tablespoon Cornflour
  • 1 tablespoon Light Soy Sauce
  • 1 tablespoon Sesame Seed Oil
  • 4 tablespoon Water
How to do it:
  1. Marinate beef and set aside for at least an hour.
  2. Mix ingredients for seasonings and set aside.
  3. Heat oil in wok.
  4. Add spring onion and ginger and saute till fragrant.
  5. Add beef and quickly stir fry till 75% cooked.
  6. Add seasoning and stir fry in heat heat till sauce thickens and beef is just cooked.
  7. Dish and serve immediately.
Note:
Add 3 tablespoon of crushed black pepper to change it to black pepper beef instead. You can leave out the spring onions.

Bacon & Beef Rolls

In this dish, I have combined 2 dishes, Asparagus with Bacon and Beef Rolls in Tomato Sauce , together. I have also added some more ingredients to it.

See how easy it is to change a dish by adding or changing ingredients. I have Crabstick, Asparagus and Baby Corn for both Bacon and Beef Rolls.

If you have some dishes you like, change the ingredients or the method of cooking and wala! It’s a new dish!

Beef Rolls in Tomato Sauce
鲜番茄酱牛肉卷


I trying my hands on a beef dish for my son. He needs to put on more weight. I found this recipe that uses beef when I was sorting the recipes I tore from magazines. I have adjusted some of the ingredients with some of my son’s favourites. Hope it will catch his attention.

Ingredients:
  • 8 slices of thinly sliced beef
  • 4 baby corn, cut into 4 ‘sticks’ each
  • Carrot thinly sliced or shredded.
  • 8 cherry tomatoes, diced
Seasoning:
  • 1 tablespoon Tomato sauce
  • 2 teaspoon Soy sauce (1 each for marinating & sauce)
  • 1 teaspoon Sugar
  • 200ml Stock or water
  • Cornflour mixture (mix 1 teaspoon cornflour with 1 tablespoon water)
How to do it:
  1. Marinate the beef with a teaspoon of soy sauce for 10 minutes.
  2. In a small pot of hot water, add 1 teaspoon of salt & oil.
  3. Blanch the baby corn. Remove & put it in a bowl of room temperature) water to stop it from further cooking.
  4. When this is done, roll the beef with a slice of carrot and 2 sticks of baby corn.
  5. Hold the beef with toothpick
  6. Dust the beef rolls with cornflour.
  7. Heat 1 teaspoon of oil and pan-fry the beef roll till the beef roll is cook (about 8 mins)
  8. Remove from pan.
  9. In the same pan, add in the diced cherry tomatoes and seasoning except the cornflour mixture.
  10. When the sauce starts to boils, add in the beef rolls to cook for a while to absorb the sauce.
  11. Remove & set aside.
  12. Now, add the cornflour mixture gradually to thicken the sauce.
  13. Pour the sauce over the beef rolls and serve.

Note:
You can also use enokitake mushroom in it. Do adjust the amount of the seasoning if you prefer more sauce.
