Fruit Popsicles
水果冰棒


I was requested to come out with recipes that were suitable for toddlers or children for the Bosch recipes using the Bosch ErgoMixx Hand Blender MSM67160. This was one of them.

A super easy treat, now made easier with the help of kitchen gadget. My idea was to make it look like a 'slice of' watermelon. What do you think of it?



Ingredients: (makes 4 popsicles)
  • 300g Watermelon, chopped into chunks
  • 50g Blueberries
  • 1 Kiwi

How to do it:
  1. Place watermelon in the universal cutter and set to speed 6.
  2. Give it a few pauses.
  3. Scoop 1 ½ tablespoon of blended watermelon into ice cream moulds.
  4. Add 2 to 3 blueberries to it.
  5. Cover the ice-cream mould top.
  6. Freeze it for 20mins till a thin layer of the blended watermelon has set.
  7. Remove the universal cutter from the mixing beaker and cover it with lid provided.
  8. Refrigerate the blended watermelon until it is ready to be used again.
  9. Repeat step 3 to 6 until almost reaching the rim of the mould.
  10. Meanwhile, blend the kiwi with the mixing wand in the measuring beaker until smooth.
  11. Scoop 1 ½ tablespoon of kiwi puree into the ice-cream mould to top as the last layer.
  12. Freeze overnight.
  13. Serve frozen.

Fruit Salad with Citrus Vinaigrette

A few days ago, someone send me a message asking for a fruit salad suggestion. We exchanged messages on it and I couldn't stop thinking about it after that.

I think the fruit salad with the dressing I suggested should work but I had to try it out just to make sure. Cannot 'sabo' people right? :P Later, it taste horrible, how? :P

Since I had all the ingredients for the dressing and lots of fruits (that I'm trying to clear), I went ahead to try it.

Everything was ok except the dressing smelt a bit strong of the apple cider it had. So I added mint leaves. It helped only a bit but it wasn't as bad when it's added to the salad. It actually goes well with the fruits.

Was a relief for me after that. :P So, note to self, no more kaypo-ness suggestion from me unless I have tried it. :P


These are what I have in the salad bowl:
  • Lettuce
  • Alfalfa spouts
  • Cherry Tomatoes, halved
  • Seedless Red Grapes, halved
  • Blueberries
  • Rock Melon, scooped using melon baller
  • some Orange sacs, optional

The ingredients for the Vinaigrette Dressing, to be chilled before use, are:
  • 1/2 tablespoon Olive Oil
  • 2 tablespoon Orange Juice (either freshly squeezed or store-bought)
  • 1/2 tablespoon Apple Cider
  • Juice from 1 Lime Juice
  • Fine sugar to taste 
  • 5 Mint Leaves, crushed (removed before serving)

Crabstick and Corn Salad

This is a remake of a dish that I shared sometime back.

I love adding Tobiko (fish roe) as it gives the salad the extra crunch. I will use Ebiko (shrimp roe) if I can't get Tobibo. For those who are totally unable to get Tobiko or Ebiko, may like to try Cavier. It's a lot more saltier than Tobiko and Ebiko. So it might want to use it sparingly. Otherwise, just leave that out.

I'm going to list, as a guide, on the quantity of ingredients used here. You are free to adjust accordingly to your liking.

Ingredients:
  • 5 Crab Stick or Imitation Snow Crab Legs, shredded
  • 1/2 Japanese Cucumber, seeds removed, julienne and soak in cold water for 2 mins
  • 4 tablespoon Whole Kernel Corn, steamed and cooled
  • 1 1/2 tablespoon Tobiko or Ebiko
  • Japanese Mayonnaise

How to do it:
  1. Drain cucumber and corn.
  2. Place all ingredients in a bowl, mine is in the order of cucumber, snow crab legs, corn and tobiko.
  3. Drizzle some mayonnaise and serve.

Seasoned Top Shell
凉拌海螺片


I always a can of top shell in pantry. My husband loves it and so do some of my friends. It's a common side dish you will enjoy with a mug of ice cold beer.

It's pretty easy to prepare so if you have friends dropping by unexpectedly, you can always serve this. Maybe, you might have to stock-up 2 cans instead. ;)


Ingredients:
  • 6 pieces Top Shell, sliced
  • 1 red Chilli or Chilli Padi, sliced
  • 2 Shallot, sliced
  • 1 sprig Coriander, chopped
  • 2 leaves Lettuce, sliced

Seasonings:
  • Juice of 3 Calamansi
  • a dash of Ground Black Pepper
  • 1/2 teaspoon Worcestershire Sauce
  • 1/2 - 1 teaspoon Sugar
  • 1/2 teaspoon Sesame Seed Oil or Olive Oil

How to do it:
  1. Place sliced lettuce in a dish and set aside.
  2. Mix seasonings well.
  3. Add in the sliced top shell and the rest of the ingredients.
  4. Toss well.
  5. Place the seasoned top shell on the lettuce and serve.

California Roll
加州寿司卷



I have not make sushi for a long time. We went to Jin Tai Fung for Xiao Long Bao on Sunday so I took the chance to go (super-market) shopping for sushi making ingredients. It's sushi for dinner yesterday!

Ingredients:
  • Rice mixed with Japanese sushi vinegar
  • Japanese Cucumber, cut in strips - length wise
  • Tobiko
  • Avocado, sliced
  • Nori
  • Prepared Radish, cut in strips - length wise
  • Japanese mayonnaise
  • Crab stick, cut in strips – length wise

How to do it:
  1. Scoop cooked rice into a bowl.
  2. Wait for the rice to cool before adding the vinegar.
  3. Fold in the vinegar. Do not smash the grain.
  4. Use a damp cloth to cover when not in use.
  5. Wrap your bamboo mat with clipwrap.
  6. Lay rice over the mat.
  7. Place a piece of nori on top of the rice.
  8. Place on the nori, cucumber, radish, crabstick, avocado and mayonnaise.
  9. Now start to roll. Squeeze slightly as you roll.
  10. When the roll is formed, spread some tobiko on the side on the mat.
  11. Now gently roll to let the tobiko ‘stick’ to it.
  12. Cut the roll into equally pieces.
  13. Serve.

California Temaki

Ingredients:
  • Rice mixed with Japanese sushi vinegar
  • Nori
  • Avocado, sliced
  • Tobiko
  • Japanese mayonnaise
  • Japanese Cucumber, cut in thin strips - length wise
  • Crab stick, cut in strips – length wise

How to do it: 
  1. Cut the nori in to half.
  2. Put nori on your palm.
  3. Spread half of the nori with rice.
  4. Place cucumber, crabtick, avocado and mayonnaise diagonally on the rice.
  5. Now close in your fingers to let the nori fold in together (ie, joining 2 side of the rice together.
  6. Now roll in the rest of the nori so it looks like a cone.
  7. You can use a grain to ‘stick’ the nori to the cone.
  8. Sprinkle some tobiko on top.
  9. Serve.

    Assorted Sushi
    各式寿司


    Ingredients:
    • Rice mixed with Japanese sushi vinegar
    • Nori
    • Tobiko
    • Japanese Cucumber, cut in strips - length wise
    • Prepared Radish, cut in strips - length wise
    • Crab stick, cut in strips – length wise
    • Prepared Dried Gourd

    How to do Tobiko Gungan Nigiri (top left):
    1. Grab a palm full of rice in your hand,
    2. Squeeze it to a rectanglar shape.
    3. Cut a piece of nori which in slightly higher than the rice ball.
    4. Wrap the nori around the rice ball.
    5. Scoop some Tobiko on the rice.
    6. Serve.

    How to do Crabstick Nigiri Sushi (top right):
    1. Grab a palm full of rice in your hand.
    2. Squeeze it to a rectanglar shape.
    3. Place a piece of crabstick on the rice ball.
    4. Cut a thin piece of nori.
    5. Wrap over the crabstick and rice ball.
    6. Serve.

    How to do Assorted Maki (bottom):
    1. Place a piece of nori the bamboo mat.
    2. Spread rice on 2 third of the nori.
    3. Place either cucumber, prepared radish, crabstick, or prepared dried gourd
    4. *You can also put all the ingredients together. Then it will become Futo Maki.
    5. Now start to roll. Squeeze slightly as you roll.
    6. Cut the roll into equally pieces
    7. Serve.

    Wakame Salad



    My hubby thinks I’m mad. I'm so hooked on Wakame aka seaweed that I have to make myself a Tupperware of the Wakame Salad everyday to munch on it as and when I like. My hubby said it doesn’t look good, doesn’t taste good and he just doesn’t understand my craze about the veg.

    Beats me, I don’t understand either. Well, at least it’s a healthy ‘snack’ and it’s really easy to prepare because I have it as a salad; meaning no cooking required. The kids loved it when I cooked it with eggs. The only person missing it is the person who thinks I’m mad.
    What goes in there: Wakame, Chinese Parsley or Coriander, Oyster Sauce, Sesame Seed Oil and Lime juice. If you like it hot, add some cut chillies.

    You decide on how much of the ingredients you like to add. Mix all the ingredients together and you can start to munch! Easy peasy!

    Salad Supper



    My husband and I have this bad habit of taking supper because we always stay up. We used to take all the fried stuff, chicken wings, fish balls … Gosh all the fats! It’s going to block all our blood vessels!! Ha!

    We have decided to change all this! Not to stop taking supper though! Ha! We have opted for healthier choice … salad.

    This is one of my salad selections. It includes, Alfalfa Spouts, Lettuces, Cherry Tomatoes, Ham, Smoked Salmon, Crab-stick and Apples with Thousand Island or French Dressings.

    However, we haven’t kick the habit of drinking coke after that!! Ha! It’s a good start though. Got to work harder!
