Lunch Box #5

This is my son's lunch box yesterday. His favourite, Japanese and Mango. Again, I didn't use the usually Japanese short grain rice, just normal Thai fragant rice and I did my own sushi vinegar using the following ingredients:
  • 1 1/2 tablespoons rice vinegar
  • 1 tablespoon caster sugar
  • 1/2 teaspoon salt
The ingredients I used for the maki are (Japanese) Cucumber, Avocado, (sweet) Tamago, Kani, Tobiko and (Japanese) Mayonaise. Want my son to eat a lot and fast? Serve him maki. ;)

  4. Hi I would like to make my own sushi lunchbox..can I check with you, do you actually prepare it in the morning itself or the night before. I am worried that if I prepare the night before, the seaweed will turn soggy...And also how do you keep it cool since your son will only eat it during lunch?

  5. That mango is so cute with the giraffe. I have tried to emulate your lunches for my 4 year old. She loves it when I make things look special. This whole thing of making food appealing, ie, cute, for kids is genius. Why didn't my mom do this?!

  6. I find it difficult to get jasmine rice to stick nicely for sushi; I tend to stick (pun not intended!) to short grain rice for that.

    Almost all kids I know love maki sushi because they are so pretty and cute. Lovely colours and small pieces just right for little hands :)

    You cut the sides of the mango (seed in the middle), cut parallel lines be careful not to cut thru. Then turn the mango slice 45 - 90 degrees and cut parallel lines again. You will get many diamonds. Hold the edge of the mango, then push the bottom (skin) up and the 'diamond' mango will be pushed out. :)

    I dont prepare the night before. This lunch box was prepared on the same day. You can put an ice pack in it. You can get these small ice packs from Diaso. They even have lunch box which has a 'slot' to put the ice pack on the underside of the cover.

    So far I don't have any problems using jasmine rice. I always make it more moist and it stick nicely. Save me $$ form having to buy short gain rice. ;P

    can i ask what kind of rice vinegar that you're using? which brand is it? is it the same like the chinese rice vinegar? or do i have to use a japanese brand vinegar?

    For this, I made my own. I use to buy Mitsukan Sushi Vinegar.

    Sushi Vinegar is different from Chinese Rice Vinegar. The content is different. So dont get the wrong one.
    Sushi Vinegar contains sugar & salt in it.
