Curry Chicken
咖哩鸡


The last time I cook Curry Chicken was .... 3 months ago! And I am so used to adding stuff by estimation when I wanted to put it down in writing, I realised I'm like my MIL ... a bit of this and a bit of that. I found myself asking, eh ... how much exactly is a bit? :P

I remembered to note down the quantity this time. So if you waiting for me to post this recipe, here goes ....



Ingredients:
  • 1 Chicken, chopped into parts
  • 400g Potatoes, skinned and cut into smaller pieces
  • 30g Curry Powder for meat (cos there is curry powder for fish too)
  • 750ml Chicken Broth or Water
  • 500ml Coconut Milk
  • 200ml Coconut Cream
  • 2 tablespoon Oil
  • Salt and Sugar to taste


Spices to be grind into paste:
  • 10 Shallots, skinned
  • 3 clove Garlic, skinned
  • 10g Turmeric
  • 20g Galangal
  • 6 Red Chilli (more if you can handle it)
  • 1/2 stalk Lemon Grass


How to do it:
  1. Add 2 tablespoon of broth or water to the curry powder and mix well.
  2. Set aside.
  3. Heat wok with oil.
  4. Add in the Spice paste and fry till fragrant.
  5. Add the curry powder paste to the spice paste and mix well.
  6. Add in the Chicken and stir fry for 2 to 3 minutes.
  7. Add in the potatoes and the rest of the broth or water and coconut milk.
  8. Bring to a boil.
  9. Reduce to a simmer and continue cooking for 30 - 60 mins or till both chicken and potatoes are tender ( I simmer for almost 2 hours).
  10. Stir in the coconut cream.
  11. Add sugar and salt to taste.
  12. Bring to a boil.
  13. Serve with toasted French loaf or rice.

Blanch your hor fun, noodles or bee hoon then pour over the curry and Viola!

  1. i love curry!! hehe.. but i always lazy.. just buy instand curry paste with add on 'curry leave' with chic and potato, yrs looks delicious.. yum yum.. i like eat with plain roti with curry source as well... yum yum...

    I've a question here. Sorry if it sounds quite ridiculous. I'm wondering what's the difference between coconut milk and coconut cream? I thought they should be the same? And also, what if we only use one of them for curry, will the curry taste differently?

    Sorry, I should have explain that.

    Coconut milk is thin and coconut cream is thick. If you are using fresh coconut to get the milk, coconut CREAM will be this first 'squeeze' and coconut MILK and be second, after you add more water to squeeze the milk out.

    You can use just coconut milk only. Adding coconut cream will make it richer. Alternatively, for a healthier choice, you can use evaporated milk. :)

  5. I cook by estimation too haha. Even when I have recipe, I basically just look at what ingredients needed. The amount I estimate hehe. That's why I can't bake cake because amount is very crucial, can't just estimate.

    Haha ... it's easier to estimate. Sometimes, the amount is so little, unless you have a good scale, you can weight or measure it. So agak-agak lah. haha ....

    Oh, for baking cannot agak-agak. hehe ...

    Peeping Linda ... hehe ... Thanks. The prawn dish is like an appetizer. I did the sweet mustard before and like it so I used it on the prawn.

    The baked fish is my hubby's favourite. ;) I hope to be able to post faster. Looks like I have sooo many outstanding recipes to post. :P

  8. Your baked fish looks yummy, I can tell. I used to read Shiokadelicious, Singapore food blog. She posted baked fish on banana leaf recipe which uses curry powder and yoghurt. The blog was shutted down and I never wrote down the recipe *sob*

    I usually buy curry powder from those indian stall. The seller will pack the powdered spices for me so I have no idea what's in it. :P I think next time I must ask if he understands what I'm saying. :P

    Sometimes when I'm lazy, I buy curry paste. I haven't seen the brand for a while. It's Hai's. It's with a Chef Logo.
