Chicken Teriyaki
日式照烧鸡



I love this dish. It’s like the Chicken Teriyaki Burger you have in MOS Burger. Simply yummy!

Ingredients:
  • 1 Chicken Drumstick or Breast, deboned
Marinade:
  • 1 tablespoon sugar
  • 1 tablespoon Mirin
  • 1 tablespoon wine
  • 2 tablespoon soy sauce
How to do it:
  1. Mix the marinade.
  2. Pour the marinade over the chicken and marinate for at least ½ hour.
  3. Dust chicken with corn flour and sauté in pan till lightly burnt. Pour away excess oil.
  4. Pour the remaining marinade for the chicken in the pan.
  5. Cook till the sauce thickens.
  6. Remove and serve hot.
Note:
Serve it with rice or have it like a burger with lettuce, tomato, etc. It’s delicious!

    Thanks! For this, I used Japanese cooking wine but I used Chinese Cooking Wine, Hua Tiow, before and it tasted the same.

    Mirin is a sweet wine.
    If you are from Singapore, you can get it in Supermarket. Look for these Japanese words 本みりん. It's in plastic bottle with red cap and the liquid looks like cooking oil. You should be able to see Mirin on the back label with all the English translation.

    you think i could just substitute it with something else like fish sauce/seasoning sauce or something like that?
    or shall i just totally ignore it in my cooking?

    You can ignore it for this dish if you can find mirin. It still taste great.

  7. Thanks wokkingmum. this dish is so yummy. Only problem is pan-frying the chicken makes the whole house fumed with its smell but definitely worth it!!

    I tried this dish over the weekend but not very sucessful leh. Cos i used 1 kg of breast meat and the measurement of the seasoning was wrong. Mind telling me for 1kg of meat how much seasoning should i prepare and what type of soy sauce you using? Light or dark soya sauce and your wine, is what wine?

  10. Ling, 1kg? I think 4x the quantity stated is enough. Just mix it now and then so all the meat are well marinated.

    I'm using light soy sauce. If you can get Japanese cooking wine (can get at Daiso), it will be better. Otherwise, Chinese Cooking Wine also can.

    It's not necessary to add any more wine cos mirin is itself a wine. :)
