Fruit Popsicles
水果冰棒

I was requested to come out with recipes that were suitable for toddlers or children for the Bosch recipes using the Bosch ErgoMixx Hand Blender MSM67160. This was one of them.

A super easy treat, now made easier with the help of kitchen gadget. My idea was to make it look like a 'slice of' watermelon. What do you think of it?

Ingredients: (makes 4 popsicles)
  • 300g Watermelon, chopped into chunks
  • 50g Blueberries
  • 1 Kiwi

How to do it:
  1. Place watermelon in the universal cutter and set to speed 6.
  2. Give it a few pauses.
  3. Scoop 1 ½ tablespoon of blended watermelon into ice cream moulds.
  4. Add 2 to 3 blueberries to it.
  5. Cover the ice-cream mould top.
  6. Freeze it for 20mins till a thin layer of the blended watermelon has set.
  7. Remove the universal cutter from the mixing beaker and cover it with lid provided.
  8. Refrigerate the blended watermelon until it is ready to be used again.
  9. Repeat step 3 to 6 until almost reaching the rim of the mould.
  10. Meanwhile, blend the kiwi with the mixing wand in the measuring beaker until smooth.
  11. Scoop 1 ½ tablespoon of kiwi puree into the ice-cream mould to top as the last layer.
  12. Freeze overnight.
  13. Serve frozen.

Home-made Chocolate Ice Cream
自制巧克力雪糕

Last week, I made and shared my Home-made Mango Ice Cream and it created a Mango Ice Cream making fever in my Facebook community. I have friends in Facebook who have made, Oreo Cookies, Strawberry, Peach, Coconut Flavours too. Raisins and Rum are also in consideration!

However, none of those are my daughter's favourite. She only likes Chocolate flavour. So I made a small tub of Chocolate Ice Cream just for her.

This recipe is slightly different from the Home-made Mango Ice Cream. It will required some cooking but it's worth the trouble. The quality of chocolate ice cream depends very much on the chocolate chips used. I'm using the chocolate shown below. It is slightly bitter and the result was the ice-cream tasting very chocolatey and very similar to the store-bought Sticky-Chewy Chocolate Ice-cream. :)

My daughter love it and since this portion makes only about 4-5 scoops, noone else is sharing this with her. (my son had the whole tub of Mango Iceream to himself too)

Ingredients:
  • 200ml Whipping Cream
  • 100ml Fresh Milk
  • 55g Cooking Chocolate Chips
  • 1 tablespoon Sugar or to taste

How to do it.
  1. Prepare a pot of water and let it simmer.
  2. Place whipping cream and fresh milk in a smaller pot.
  3. Put the smaller pot over the simmering water and warm the cream and milk.
  4. Add the chocolate chips into the warm milk and melt it, while still hold it over the simmering water.
  5. Keep stirring till all chocolate chips are melted and blended in with the milk.
  6. Add sugar to taste and melt it.
  7. It will now look like thick chocolate milk.
  8. Pour the chocolate milk to your freezing ware.
  9. Cool it before freezing.

Note:
  • This portion yields 4-5 scoops of ice-cream.
  • I used double-boiling method to method the chocolate with the milk to avoid burning the chocolate.
  • I removed the ice-cream to stir with a fork twice only and let it before letting it set.
  • You can mix some chocolate rice when it's partially cool (to avoid melting them) too.
  • I use the baking paper to cover the ice cream to prevent any water droplet from getting to the ice cream, which will cause the ice-cream surface to crystallize.

Home Made Mango Ice Cream
自制芒果雪糕

I had an old recipe that I posted sometime back on my home-made ice-cream which required more steps and more ingredients.

This time I tested it with just using whipping cream (cos I happened to have one) and it works well too! You will be surprised to know how easy and simple it can be. :)

Mangoes are somehow in season now (didn't remember they were in season during this part of the year) and are always on offer. I can't resist it and bought 5 there other day and kept two for this recipe.  You can use other fruits instead but Mango is always a favourite. You just can't go wrong with Mango.

I'm sharing this recipe first as I have a high number of requests for it after I post it in my Facebook. If you are waiting for my other outstanding recipes, I will post them as soon as I have time to do it.

Meanwhile, I hope you enjoy this recipe. Do check out my recipe for Home-made Chocolate Ice-cream too.

Ingredients:
  • 2 ripe Mangoes
  • 200ml Whipping Cream
  • 5 tablespoon Icing Sugar or to taste

How to do:
  1. Stone and skin mangoes.
  2. Puree 350g of the mangoes (about 1 1/2 mangoes) and dice the rest.
  3. Mix or blend the mango puree with sugar and whipping cream.
  4. Add some diced mangoes too if you like to the blended mixture (I did though you can't see it from the photo). It's really nice to be able to bite into bits of mango when you eat the ice cream.
  5. Pour the mixture into a container.
  6. Place a piece of baking paper on it and freeze till frozen.

Note:
  • Add sugar according to your taste, taking note that after adding the whipping cream, the mango mixture will be less sweet.
  • If you remove every hour to stir with a fork and repeat for 5 to 6 times or till it set. It will helps keep it more creamy and less crystallize-like.
  • I use the baking paper to prevent any water droplet from getting to the ice cream, which will cause the ice-cream surface to crystallize.

Durian Puff cum Ice Cream
榴莲泡芙与雪糕

The supermarket here was selling durian at $10 for 3 boxes. I just couldn't resist buying them. They were quite good for the price.

I went back the next day to get another 3 boxes with the intention of making durian cake. I had removed all the durian pulp. When I was ready to make it, my friend called and said she couldn't get the cake from me. I always pass some of my cakes to my friend as we can never finish them.

In the end I decided to make Puff instead, which is much easier. These are mini, bite-size puff.

Since I had already prepared the durian pulp, that is, all beaten up, I decided to use them all. You don't have to add so much. Here's my recipe for the Durian Cream Filling .

Ingredients:
  • 200 ml Diary or Non-diary Whipping Cream
  • 350g Durian pulp
  • 10g Gelatine Powder
  • 3 tablespoon Hot Water
How to do it:
  1. Beat whipping cream till soft peak. You might want to use an electric beater as it will take quite a while if using hand.
  2. Melt gelatine powder with hot water.
  3. Add the melted gelatine and durian to the whipped cream and mix well.
  4. Your durian cream filling is ready to use.

As I had put a lot of durian pulp for my durian cream filling, I decided to save half of the amount and freeze it. 4 hours later ... viola! It became creamy and yummy Durian Ice Cream!

Rambutan Ice Blended

I recently had a Rambutan (flavoured) Ice Blended at those $1.50 ice blended stall. I was telling myself how expensive it was. It was just ice, syrup and some sago. For $1.5o, I could buy a can of rambutan.

That thought gave me the idea of making this. I freeze 10 canned Rambutan with pineapple and the 3/4 can of syrup with 1/4 can of water in ice cube tray for 2 1/2 hours. The syrup won't be totally frozen, which is good as it makes blending easier. Add the fruits and the syrup ice into the blender and blend.

If you find it not sweet enough for you, add in some of the leftover syrup. Add lesser rambutan if you don't like to your drink to have a lots of pulp. The drink won't turn pink. You have to add a tiny drop of red colouring. Try using a chopstick to dip in the colouring and then stir it in the blended ice. Don't pour from the bottle or spoon. Red isn't very nice.

I have tried using blue and green too. They are all nice, as long as you use only a tiny drop. You may want to consider using the same method for longan, lychee or any fruits and use different colours for them.

Nice to serve it at your party.

Strawberry Sorbet

I bought a punnet of strawberries and kept it for too long. Some parts of the strawberries were bruised. After cutting all the bad parts away, the strawberries don't look nice to eat anymore but it's a waste to throw them away. So just turned it to some yummy instead!

Knowing it won't be enough for the family with that little strawberries, I bought another punnet of strawberries. Now it enough for everyone at home.

Now this has become my son's favourite!

Ingredients:
  • 500g Strawberries, top removed and frozen
  • 50ml Lime Juice
  • 50ml Water
  • 50g Fine Sugar, or to taste

How to do it:
  1. Blend all the ingredients together until smooth and sugar has melted.
  2. Pour the blended sorbet into a flat pan and freeze for about 20 minutes or firm enough to scoop.
  3. Serve immediately.

Note:
Best to do this just before serving.

Mango Ice
芒果沙冰

We love blended ice and I thought maybe I could give it a try myself. It shouldn't be that difficult. Ohh… we loved it!

Ingredients:
  • 1 mango; skinned and sliced
  • 1 cup of home-made syrup to taste (boiling water and sugar together)
How to do it:
  1. Blend ½ mango and syrup in a blender.
  2. Remove and freeze it.
  3. When the mango ice is about 80% frozen, removed from freezer.
  4. Use fork to pick it to break the ice.
  5. Scoop and serve with mango slices.
Note:
  • If you have a suitable blender, you can freeze the home-made syrup then blend it together with 1/2 mango and ½ cup water in a blender.
  • If your blender is not made to blend ice, don’t use this method. You don’t want to spoil the blades.
