Open-face Otah Sandwich
乌打三明治

We just returned home a couple of days ago from a trip to Hong Kong. All of us turned at least 2 shades darker. :/  It was tiring! Worst than being a maid mum at home. And now I have triple loads of laundry to clear. I need another holiday!!

I'm not sure how soon I will get back to my usual food posting so here's a quick one. It's remake of a simple Otah Toast presented differently. I prefer the bread toasted as it makes it crunchier. I'm using hotdog buns here. You are free to use burger bun or just bread. They worked the same.

I toasted the buns in the oven, you can always use a toaster or frying pan.

Ingredients:
  • 3 pcs Otah, smashed
  • 1/2 - 1 teaspoon butter, depending on how dry the otah is
  • 1 Hotdog Bun, sliced half length-wise

How to do it:
  1. Mix butter sparing with smashed otah so they stick together.
  2. Spread on the hotdog buns.
  3. Toast in a preheated oven at 200C for 10 minutes.
  4. Serve immediately.

Homemade Garlic Butter Spread

My son and me love to each garlic bread! The more spread it has the better it is. Yeah, we both love to eat garlic. :P So, don't talk to us after dinner. XD I used to buy McCormick's Garlic spread with bacon bits but I was not able to find it since more than a year ago. Since then, I started making my more garlic spread. It's really very easy. The hardest could be getting the garlic into paste-like. If you using the knife, it's going to take you awhile for the garlic to be paste-like but it will work. It just takes longer. I do it with the help of a little tool, the grater. You can of course use normal the big one if you already have one at home. Mine is a tiny one which is smaller than my palm. Oh, you can use this method to grate ginger to get the ginger juice. At least this is how I did it.

For my garlic spread, I mixed 4 glove of grated garlic to 1 tablespoon of softened butter. If you have garlic powder and/or parsley flakes, add 1 teaspoon each to the butter for extra flavours. Otherwise, garlic and butter is fine. You can make more and keep in the fridge. So you can have garlic spread anytime you want. Just spread on to any bread and toast it till slightly brown. Yummy!

Little Cheese Men

My son likes ham and cheese sandwiches but the most he will eat is a slice of bread if it's with sliced cheese even if in cute shapes. However if it's with ham alone, he can eat two slices. So I gathered that it got to do with cheese.

I tried Parmesan Cheese and guess what? He can eat more than three slices! Sure he likes it. It smells nice and is crunchy too!

* Marching Little Cheese Men *

Today we had cut-out little men and flowers (not shown here) on the remaining bread. It was really easy to make too.

Just butter the bread. Have a bowl of grated Parmesan Cheese ready. You may want to use unsalted butter since Parmesan Cheese alone is salty enough. Then press the bread with butter side down to the cheese. Shake off excess cheese. After which, you can toast it in your oven, cheese side up.

I was too lazy to bring out my oven so I used frying  pan instead. Toast the plain side first then turn over to toast the side with cheese. Remove them once they are slightly brown. Cool them on the rack before giving them to your kids.

Oh! Your kids can do this too. It's fun! Just remember to do the toasting for them.

Chicken Mayonnaise

My husband's favourite sandwich from Delifrance is Chicken Mayonnaise. I made this a few times before we were married to bring for our picnic with friends. You don't need to know cooking to do this - very easy.

My husband said it tasted just like the real one! What a huge encouragement. Thank you!

Ingredients:
(makes 2)
  • 4 slices Bread, toasted
  • A few of Lettuce Leaves
  • A few slice of Tomato
  • A few slice of Cucumber (I didn't add in mine)
  • 1 Chicken Breast meat
  • 4 - 5 tablespoon of Mayonnaise
  • Salt & Pepper to taste
How to do it:
  1. Boil chicken till cooked.
  2. Drain and remove skin and bones.
  3. Chopped into smaller pieces or you can shred it if you like.
  4. Add mayonnaise and salt to taste.
  5. Mix well.
  6. Refrigerate to chill.
  7. When you are ready to eat, just assemble everything!
Note:
  • Toasting the bread with prevent it to be too soggy.
  • If you are using Kraft Mayo, dilute it a bit with the stock you used to boil the chicken. I find it a bit to sour to use it alone.
  • Taste good with Japanese Mayo!
  • I had a few packets of Mayo from my last midnight order from McDonald's (They gave me 5 packets!!). I used those here. It tasted the best. Must find out which brand they use now.

Teriyaki Chicken Burger

I decided not to eat rice today but my family is still having rice and the usual dishes. I wanted a change so I made myself a Teriyaki Chicken Burger. Eating a burger is much easier and faster!

What's inbetween the buns:
4 leaves of lettuces
1 piece of Teriyaki Chicken
1 slice of onion, separated into rings
a squeeze of Japanese Mayonnaise

Does it look familiar? Aha! It's a copy-cat from, you guessed it, MOS Burger! Scrummy! Yummy!

Egg in Toast
面包包鸡蛋

I wanted to post this a long time ago. I was recipe hopping when I found this recipe. It's looks really good and I gave it a try that very night ... as supper. Hahahaha ... I couldn't wait mah! And it taste as good as it look! Of course have it for breakfast not supper like me and my hubby. That's unless you want to put on weight!

Ingredients:
  • 1 egg
  • 1 slice bread, preferably thick slice type
  • Salted Butter
How to do it:
  1. Use a cookie cutter or a glass to cut a hole in the middle of the bread.
  2. Spread butter on both sides of the bread.
  3. Spread some butter on a frying pan and place the bread on it.
  4. Using small fire, crack the egg into the hole.
  5. When the egg is set, flip it over and continue cooking for a while.
  6. Dish and serve.
Note:
  • I cooked on small fire so as not to burn the bread and the bottom of the egg. So you have to patient if you prefer a more cooked egg.
  • If the egg you are using is big, then you need a bigger hole. Otherwise the egg will 'over flow'.
  • You can sprinkle some salt and pepper if you wish but I don't think it's necessary since salted butter is used.
  • Don't waste the cut out bread. Toast it and eat it too!
