As mentioned in my last post, I don't have a habit of taking heavy breakfast and won't be able to finish what I prepared for the kids. I'm having mini bite-size pancake. It's about 2 palm size pancakes here. I have it with a small bowl of salad with shredded ham and a glass of juice.
I'm using Morinaga Pancake Mix but a added a tablespoon sugar, half teaspoon yeast and baking powder to the batter and let it rest while I make the kids' breakfast.
The pancake turnout really airy and fluffy. I drizzled my pancake with a little maple syrup and chocolate sauce and served it with some fruits.

{ Breakfast: Pancake with Egg, Sausage and Bacon }

This morning's breakfast was Pancakes with whatever I'm trying to clear in the fridge. :P
I bought 2 boxes of button mushroom a few days ago but did not store them properly and they were all bruised and turning brown. So my daughter was happy that she's having her favourite mushroom soup again.
The bacon was expiring soon, so I had to clear that too. I added an egg (with a runny yolk) and a couple of sausages too.
This was the kids' breakfast. I can't eat this much for breakfast. I'm just having some simple fluffy pancakes.

Pancakes with Strawberry and Cream
草莓鮮奶油煎饼

This is another recipe that I did for the Bosch recipes using the Bosch ErgoMixx Hand Blender MSM67160.
It is the kids' all time favourite. You can use premix pancake or hotcake mix to do this. You can also make it from scratch as all ingredients required are very common and easily available.
The fruits can be replaced with bananas, peaches, kiwi, etc, whichever is in season. You can also simply serve it with pancake syrup or chocolate sauce.
Ingredients for pancake:
- 100g Top Flour or All Purpose Flour
- 1 tablespoon Corn Flour
- 1/2 tablespoon Baking Powder
- 3-4 tablespoon Icing Sugar
- a pinch of Salt
- 1 Egg
- 100ml Fresh Milk
- 1 teaspoon Vanilla Extract
- 1 tablespoon Melted Butter
Other Ingredients:
- 6 Strawberries
- 100ml Non Dairy Whipping Cream
- 1 tablespoon Icing Sugar
- a handful Blueberries (optional)
How to do it:
- Sift all the dry ingredients in a bowl and set aside.
- Crack the egg in another bowl.
- Add milk and vanilla extract to the egg.
- Attached the beating whisk attachment and set speed to 8.
- Whisk the mixture well.
- Add the dry ingredients 1/3 at a time to the egg mixture.
- Using the same beating whisk attachment, set the speed to 5, whisk till the dry ingredients are incorporated to the egg mixture.
- Repeat until all the dry ingredients are blended into the egg mixture.
- Pour in the melted butter and give a quick whisk to just blend it in to the batter.
- Heat a non-stick pan on low heat.
- Pour 2 tablespoon of batter to the pan and cook until bubbles appear.
- Turn it over and continue to cook until the bottom side has browned.
- Repeat to make 4 pancakes or until all the batter has finished.
- Set the pancakes aside to cool.
- Haul all strawberries and slice 4 strawberries.
- Set aside.
- Pour Non Dairy Whipping Cream into the measuring beaker.
- Attached the beating whisk attachment and set speed to 10.
- Whisk until the cream becomes stiff.
- Either spread whipped cream on a pancake or pipe it out using a star nozzle.
- Arrange sliced strawberries on the whipped cream.
- Spread another layer of whipped cream before placing another piece of pancake over.
- Scoop some whipped cream to the middle of the pancake and place a strawberry on top.
- Dust with icing sugar and serve with additional blueberries if you like.
Note:
- If you prefer a sweeter whipped cream, you can add a tablespoon of icing sugar to the non-dairy whipping cream to whip up the cream.

Cakey Donut Balls
球狀甜甜圈
Labels:

*deep-frying
It was suppose to be pancakes for breakfast but the kids first all the milk before I could get some. Hence, I decided to make donut (balls) instead.
As premix pancake mix is use here, the texture is unlike the 'real' donut which is a bit chewy. It is more like cake and it's crispy on the outside. However, since it's not the actual 'real' donut, there isn't any waiting time for the dough to rise. You just mix it, shape it and fry it. Pretty easy and fast.
Ingredients:
- 150g Pancake Mix
- 1 Egg
- 20g Granulated Sugar
- 20g Cold Butter, chopped int small pieces
- Oil for frying
- All purpose flour for dusting
- Icing sugar for dusting
How to do it:
- Mix all ingredients, except oil and icing sugar together. Mixing by hand will be easier.
- Mix and knead till the mixture turn into a dough.
- Place a piece of baking paper on the table top or you can just use your table top.
- Dust with flour.
- Take some dough and roll into a ball.
- Use your palm to flatten the dough on the dusted baking paper to about 1cm in height.
- Lightly dust the top of the dough.
- Dust a circle cutter. I use a piping nozzle which is about 3cm in diameter.
- Cut the flatten dough with the cutter.
- Repeat till all the dough have finished.
- Heat oil for frying. It should be hot but not smoking.
- Reduce to low heat.
- Gently drop the circle dough into the oil to fry.
- They cook very fast, so remember to keep turning so they will fry evenly.
- Drain on paper towel.
- Dust with icing sugar and serve.

Pan (Cup) Cake
杯子松饼
I was packing my pantry and found 2 packet of Morinaga Pancake Mix expiring this month. Not wanting to waste them, I decided to use 1 packet to make pancakes as my dinner :P
While making my 2nd pancake, the little one came into the kitchen asking for help with her homework. I decided to pour the reminding batter into muffin cups and baked them instead. :P
As I did some adjustment to the instruction on the packaging, the results of the baked pancake turned out not too bad. It's like a cross between cupcake and muffin.
I made 2 large pancakes and 4 cupcakes or about 7-8 cupcakes without making pancakes, with the batter. If you have the same pancake mix, you might want to give it a try.
Ingredients:
- 1 packet Morinaga Pancake Mix (160g)
- 2-3 tablespoon Icing Sugar
- 140ml Fresh Milk
- 1 Whole Egg
- 1 Egg White
- 1 teaspoon Vanilla Extract
- 1 tablespoon Baking Powder
How to do it:
- Mix all ingredients together.
- Whisk till smooth with no lumps (I used a blender to do it).
- Let the batter rest for 5 mins.
- Pour batter into muffin cup till 2/3 full.
- Bake at preheat oven at 180C for 12 mins.
- Let it cool and add whipping cream or other toppings if you like.
Note:
You can make regular pancake using this recipe. The pancakes will rise higher and will be fluffier.
