Chinese Old Melon Soup with Barley 老黄瓜薏米汤


One of the soup I make quite often. The soup is rather sweet and my kids who don't drink barley water like this too.

Ingredients:
  • 2 Chicken Breast Meat
  • 1 medium Chinese Old Melon
  • 100g Chinese Barley, washed
  • 6 Dried Dates
  • 1.5 litre Water
  • Salt to taste

How to do it:
  1. Blanch chicken breast meat to remove the scum.
  2. Put all ingredients excluding salt in a pot of water.
  3. Bring to a boil and reduce a simmer.
  4. Remove any scum that surface.
  5. Simmer for 3 hours.
  6. Add salt to taste.
  7. Serve.

    2 quick questions, please can you help?

    1. This Chinese Old Melon Soup with Barley 老黄瓜薏米汤, any reason why it's 2 pieces of chicken breast? because I notice u usually used drumsticks in the past for chicken meat in soups.
    2. Sadly I still can't find cranberry beans. I've checked with shops in the big Tiong Bahru market (they gave me a clueless look) as well as Giant supermarket at Vivocity, both unsuccessful. Could you suggest somewhere I can go to buy cranberry beans? Would you also be so kind as to provide pictures of cranberry beans before it is cooked, what it looks like and how it is usually sold? I was rather lost while scanning the rows of shelves at Giant, not quite sure what I am searching. Haha

  3. @Anon, 1. Hahaha .... I prefer drumsticks but for this particular soup, I want it more clear and less oily. Hence, I use breast meat instead. :)
    2. Cranberry bean is commonly known as 珍珠豆. You should be able to find it in Tiong Bahru Market. It's not common in supermarket though. This is how it looks like => http://wokkingmum.blogspot.com/2007/07/cranberry-bean-with-pork-ribs-soup.html
