Home-made Chicken Broth


I have this habit of making broth for many year. It was mainly made to cook the kid's porridge when they were babies/toddlers. Sometimes I used them for noodles soup, etc. I always make sure I have broth in the fridge so I can have home-made broth anytime I want. Jazzmint ask me about my broth I used for my Macaroni in Chicken Soup. So, here it is ...

Ingredients:
  • 4 whole Chicken Bones
  • 3 - 3.5 litre Water
How to do it:
  1. Blanch the bones first.
  2. Return the bones to a pot of water to boil.
  3. Bring it to boil.
  4. Reduce heat to simmer.
  5. Skim the surface of foam till they no longer appear.
  6. Simmering should be for at least 4 hours. I simmer mine for 5 hours.
  7. Use a strainer (preferably with smaller holes) to drain the bones and particulars.
  8. Let it cool before you freeze it.
  9. The ingredients stated should yield about 2.5 litre of broth.
Note:
  • You can remove the fats from the broth by letting it refrigerate until the fat congeals. Then you are easily remove it.
  • You can add vegetables to make the broth sweeter too. I prefer just pure chicken broth.
  • The broth can be frozen for up to 6 months.
  • Do not refreeze broth that you have thaw. Therefore freeze broth in portions you usually use. I freeze my broth 600ml each.

  3. Yeah I also got mine chicken bones at 50cts each! so thats the market rate :p

    I think its a good habit to prepare the broth in advance as it saves time when you really into cooking something urgently!

    The market at my father's place sells by weight and it's cheaper!

    Do you know you can get from Shop & Save? They have 2 types, this one which is shown here and another type they label as chicken backbone. It's only the backbone part but with the meat and skin. Quite good too.

    Yeah, I think so too. I even freeze in ice-cube tray for small portion usage.

    Its good that you are the main person using the fridge...as I am in a way sharing with my MIL, its inconvenient, sometimes, to do things my way :p

    Btw, I went to Daiso, teh $2 shop yesterday...hoping to find the miso paste you recommend but cant find it..sob sob!

    Hehehe ... yes. It all packed neatly, bags in trays and basket. Makes removing items much easier. :p

    I can understand. I won't want to share with my MIL. You will faint when you open her fridge. Hahaha! Sometimes, I think it's amazing how she still know what is in there. hehehe

    I dont think they have miso paste there. Only the Wakame. Try cold storage and some NTUC have them too. Too expensive to sell at $2 hehehe .. Cost me around $7 for a 1 kg pack

  8. Hi Idy! I use normal one that are freezable. Oh, when you do it, remember DO NOT fill the container full. Water expand when frozen, so more space, okay. Otherwise your container will break.

    Aww .... that's so sweet of you! Your wife will feel like the luckiest woman on earth. Must show my husband your comment here. hehe ...

    Okay, I blanch by putting the bones in a pot of boiling water for 5 minutes. After which, discard the water and continue cooking the bones with a fresh pot of water. If the bones are 'dirty' (with traces of scum) just quickly let it running thru clean water. It will be washed off.

    I did that with fish bones when my boy was smaller too to cook porridge for him. Maybe i can revive the "broth" habit for the family to save on cooking time.

  12. Anonymous, I'm still make broth regularly. You can use it to make soup in the shortest time if you are pressing for time or cook a bowl of mee sua anytime you are hungry. :)
